Avial (Or ) Aviyal , - Recipe

Preparation method for Avial (Kerala spl dish)

Ingredients :

Coconut oil - 1/2 cup
Vegetables 2 cups - Carrot, Beans, Potato, Peas ,(add more as you like)
Curd - 1/2 cup
Grated Coconut - 1/2 cup
Small onion - 3-4 pcs
Green chilly -3 pcs
Jeera - 1 Tea spoon
Turmeric powder - 1 Tea spoon
Curry Leaves - 8 to 10
Salt

Procedure :

1) Fry the vegetables in 1/4 cup of coconut oil.
2) Add Water and stir well.
3) Add curd and allow vegetables to cook.
4) Grind { Grated Coconut , Small onion ,Green chilly ,Jeera,Turmeric powder } and
make a paste out of them.
5) When the vegetables are cooked add the paste and salt to taste.
6) Saute till the smell of fresh coconut is gone.
7) Add remaining coconut oil and pan-fry.
8) Add Curry leaves , stir once or twice
9) Avial is ready :). Enjoy the dish

Tips :
Do not add mustard seeds, they change the taste (it will be like the Avial prepared in TN :)


Some years back I asked one of my friend (Not hiding her name , she is anjana :P a malayalee )to guide me in avial prep. Her mom's prepared avial so yummy on Onam and I wanted to learn it.

Now, I got the prep method from TV show ;) hurray. Waiting to try it by week end.
